Course Objectives:

  • Discuss key nutritional strategies to control blood glucose levels to minimize macrovascular and microvascular disease.
  • Discuss strategies to adjust diet and insulin to manage blood glucose levels before, during and after exercise.
  • Review pathogenesis of macrovascular and microvascular disease.
  • Differentiate between type 1 and type 2 diabetes.
  • Explain the pathogenesis of type 1 diabetes.
  • State the role of vitamin D in the pathogenesis of autoimmune disease.
  • Identify the research on the gut microbiota and autoimmune disease.
Learning Outcome: At least 80% of class participants will score 70% or greater on course post-test.
