Course Description & Information:
- Research shows that dietary habits influence disease risk. While certain foods may trigger chronic health conditions, others offer strong medicinal and protective qualities. Thus, many people argue that food is medicine. Diet alone cannot and should not replace medicine in all circumstances. Although many illnesses can be prevented, treated, or even cured by dietary and lifestyle changes.

Course Objectives:
- Explain what is meant by the term ‘food as medicine’ and list examples of how foods have been used as medicine in the past.
- State which types of foods are essential for health and wellbeing, and how they play an important role in treating/preventing disease (eg. Type 2 diabetes, CVD, HTN, depression, etc).
- Interpret evidenced based, nutrition related public health guidelines and implement them to improve nutrient intake and reduce disease in a community-based population.
- Recognize foods/components of food that have an effect on different body systems, weight and appetite, cardiovascular, gastrointestinal tract, the brain, and the genome.
- Identify the complexity and variability of inflammatory responses in various disease states and the complex interplay between nutrition, immune function and inflammation.
- Summarize evidence-based food recommendations for optimizing nutrient intake in the management of gut health, inflammation, weight loss, and other common health concerns.
Learning Outcome: At least 80% of class participants will score 70% or greater on course post-test.
