  • Immunonutrition can be defined as modulation of either the activity of the immune system, or modulation of the consequences of activation of the immune system, by nutrients or specific food items fed in amounts above those normally encountered in the diet The systemic inflammatory response, which occurs as a result of surgery, trauma, disease or infection, may exert high metabolic demands upon patients and lead to a depletion of essential nutrient stores.

Course Objectives:

  • State what is meant by the term immunonutrition.
  • Identify the range of immunonutrients that are available.
  • Name macro- and micronutrient supplements and advanced immunonutrition supplements used to support immune function in patients with COVID-19, cancer, heart disease, diabetes, & obesity.
  • To understand the importance of anti-oxidant defenses on immune function.
  • Identify the role of immunonutrition in improving patient outcome following surgery.
  • List supplements used to reduce respiratory infections in prolonged endurance athletes.

Learning Outcome: At least 80% of class participants will score 70% or greater on course post-test.
