Course Objectives
- Discuss the role of refined carbohydrates in oxidative stress and atherosclerotic plaque development.
- Discuss how trans-fatty acids and saturated fatty acids increase the risk of cardiovascular disease.
- Define cardiovascular dyslipidemia and review the mechanisms involved in its development.
Course Description
- Cardiovascular disease is the number one cause of death in the United States. Research has shown that dietary intervention can reduce the risk for heart disease in many instances and prevent secondary events. This course reviews the current research on dietary intervention in the management/prevention of heart disease. Education level: Beginner to Intermediate.
