- A comprehensive look at how refined carbohydrates play a role in neuronal death. A complete overview on the effects of macronutrients (protein, carbohydrate and fat), and brain cell health.
- Aging brain: prevention of oxidative stress by vitamin E and exercise.
- Nutrition and Alzheimer’s disease: the role of antioxidants, high dose B‐vitamins, homocysteine, and folic acid.
- The role of environmental and food toxins on cognitive function (e.g. aluminum,methylmercury).

Course Objectives
- Discuss how dietary macronutrient intake and composition can affect cognition.
- Review the mechanisms by which select vitamins/minerals that have been shown to have beneficial effect in the treatment of Alzheimer’s disease (n/a pharmacy techs).
- Review the mechanisms of action of potential neurotoxins.
